Dover sole has tender, moist flesh. Because of the thin, delicate fillets, dover sole is best suited steaming, poaching and grilling. This will help avoid overcooking.
Our delicious French day boat Dover sole (Solea Solea) is fished by small day boats off the shores of the Gulf of Gascogne (Biscay) on the French Atlantic coast. This product is fished and fresh-frozen on the very same day. It comes in a single vacuum pack in order to preserve all its flavor, texture, and freshness.

Wild French Sole, Individually quick-frozen, whole and not gutted. Each Sole weighs between 15 and 20 ounces (400-600 grams).

A classic way to serve dover sole is whole and filleted.
Serve it steamed, poached and topped with sauce, "A la Meuniere" or simply grilled with a capers and butter sauce and lemon wedges.
