  1. Heat the Extra Virgin Olive oil La Maison des Chefs 1 liter in a pot. Sauté the diced onion and minced garlic for 3-5 minutes until soft.
  2. Add the black rice and stir for 1 minute to coat with oil.
  3. Add the coconut milk, water, and bay leaves. Stir once.
  4. Bring to a rolling boil, then reduce heat to low, cover, and simmer for 45 minutes.
  5. Turn off heat and let the rice rest, covered, for 10 minutes.
  6. Remove the bay leaves.
  7. Stir in the chopped cilantro and fresh lime juice. Season generously with salt and serve.
