- Heat the Extra Virgin Olive oil La Maison des Chefs 1 liter in a pot. Sauté the diced onion and minced garlic for 3-5 minutes until soft.
- Add the black rice and stir for 1 minute to coat with oil.
- Add the coconut milk, water, and bay leaves. Stir once.
- Bring to a rolling boil, then reduce heat to low, cover, and simmer for 45 minutes.
- Turn off heat and let the rice rest, covered, for 10 minutes.
- Remove the bay leaves.
- Stir in the chopped cilantro and fresh lime juice. Season generously with salt and serve.
