- Season the chicken breasts generously with salt and pepper on both sides.
- Heat 2 tablespoons of olive oil in a large skillet. Sear the chicken for 6 minutes per side until golden brown and cooked through.
- In a bowl, mix the diced tomatoes, chopped basil, minced garlic, and 1 tablespoon olive oil.
- Transfer the chicken to a baking dish. Top each breast with the tomato mixture and shredded mozzarella.
- Bake at 375°F/190°C for 15 minutes until the cheese melts and bubbles.
- Meanwhile, pour the Delouis Organic Balsamic Vinegar of Modena into a small saucepan and reduce over medium heat until thick and syrupy.
- Drizzle the balsamic glaze over the chicken and serve.
