Classic French Crepes with Strawberry Jam & Honey

  • Flour: 1 cup
  • Eggs: 2
  • Milk: 1.25 cups
  • Butter: 2 tbsp melted
  • Sugar: 1 tbsp
  • Salt: pinch
  • Strawberry jam: 1 cup
  • Honey: 1/4 cup
  • Powdered sugar: for dusting

Instructions

  1. In a bowl, whisk together the flour, eggs, milk, melted butter, sugar, and salt until completely smooth with no lumps.
  2. Let the batter rest for 30 minutes - this helps the flour absorb the liquid.
  3. Heat a crepe pan or non-stick skillet over medium heat. Add a small amount of butter to coat.
  4. Pour a thin layer of batter into the pan, quickly swirling to coat the entire bottom.
  5. Cook for 1-2 minutes until the edges start to brown, then flip and cook for 30 seconds more.
  6. Spread strawberry jam on half of each crepe and fold into quarters.
  7. Drizzle with honey.
  8. Dust with powdered sugar and serve warm.
