Ingredients
- Flour: 1 cup
- Eggs: 2
- Milk: 1.25 cups
- Butter: 2 tbsp melted
- Sugar: 1 tbsp
- Salt: pinch
- Strawberry jam: 1 cup
- Honey: 1/4 cup
- Powdered sugar: for dusting
Instructions
- In a bowl, whisk together the flour, eggs, milk, melted butter, sugar, and salt until completely smooth with no lumps.
- Let the batter rest for 30 minutes - this helps the flour absorb the liquid.
- Heat a crepe pan or non-stick skillet over medium heat. Add a small amount of butter to coat.
- Pour a thin layer of batter into the pan, quickly swirling to coat the entire bottom.
- Cook for 1-2 minutes until the edges start to brown, then flip and cook for 30 seconds more.
- Spread strawberry jam on half of each crepe and fold into quarters.
- Drizzle with honey.
- Dust with powdered sugar and serve warm.
