- Clean the cockles thoroughly by soaking them in cold salted water for 30 minutes. Rinse and discard any that are open and don't close when tapped.
- Heat the olive oil in a large pot over medium heat. Sauté the diced onion until soft and translucent, about 5 minutes.
- Add the minced garlic, diced tomatoes, and paprika. Cook for 5 minutes, stirring occasionally.
- Add the white wine and bay leaf. Bring the mixture to a rolling boil.
- Add the cleaned cockles to the pot, cover with a lid, and cook for 5 minutes, shaking the pot occasionally, until all the cockles have opened.
- Discard any cockles that haven't opened.
- Sprinkle with fresh parsley and serve immediately with bread to soak up the delicious sauce.
