Garlic Butter Langoustine with Lemon and Herbs

  1. Using kitchen scissors, split the langoustines lengthwise down the middle.
  2. In a small pan, melt the butter with the minced garlic and red pepper flakes.
  3. Brush the langoustine meat generously with the garlic butter.
  4. Place on a grill or under the broiler for 3-4 minutes until the meat is opaque and cooked through.
  5. Add the white wine to the remaining butter in the pan and let it reduce slightly.
  6. Add the chopped herbs and juice from both lemons to the butter sauce.
  7. Pour the sauce over the grilled langoustines and serve immediately.
