  1. Slice the zucchini lengthwise into 1/4-inch thick strips. Clean the mushrooms and remove stems if large.
  2. In a bowl, mix the olive oil, minced garlic, thyme, and lemon juice.
  3. Marinate the vegetables in this mixture for 30 minutes, tossing occasionally.
  4. Preheat your grill to medium-high heat (375°F/190°C).
  5. Grill the zucchini slices for 3-4 minutes per side until they have nice grill marks and are tender.
  6. Grill the mushrooms for 5-6 minutes total, turning occasionally until they're juicy and charred.
  7. Season everything generously with salt and pepper.
  8. Serve hot as a side dish.
