Roasted California Blend Vegetables

Ingredients

  • Broccoli florets: 2 cups
  • Cauliflower florets: 2 cups
  • Baby carrots: 1 cup
  • Extra Virgin Olive oil La Maison des Chefs 1 liter: 3 tbsp
  • Garlic powder: 1 tsp
  • Onion powder: 1 tsp
  • Italian seasoning: 1 tbsp
  • Parmesan cheese: 1/4 cup
  • Salt and pepper: to taste

Instructions

  1. In a large bowl, toss the broccoli, cauliflower, and carrots with olive oil and all the seasonings until well coated.
  2. Spread the vegetables on a baking sheet in a single layer - don't overcrowd them.
  3. Roast at 425°F/218°C for 20 minutes.
  4. Remove from oven, stir the vegetables, and roast for 10 minutes more until edges are golden brown.
  5. Sprinkle the Parmesan cheese over the hot vegetables.
  6. Return to the oven for 2 minutes to melt the cheese.
  7. Serve immediately while hot and crispy.
