- In a large bowl, toss the broccoli, cauliflower, and carrots with olive oil and all the seasonings until well coated.
- Spread the vegetables on a baking sheet in a single layer - don't overcrowd them.
- Roast at 425°F/218°C for 20 minutes.
- Remove from oven, stir the vegetables, and roast for 10 minutes more until edges are golden brown.
- Sprinkle the Parmesan cheese over the hot vegetables.
- Return to the oven for 2 minutes to melt the cheese.
- Serve immediately while hot and crispy.
