- Pat the baby squid completely dry with paper towels - this is crucial for getting a good sear.
- Heat the olive oil in a large skillet over high heat (400-450°F/200-230°C) until it shimmers.
- Add the squid to the hot pan and let them sear without moving for 2 minutes to get a nice golden color.
- Add the sliced garlic and red pepper flakes to the pan.
- Toss everything together and cook for 1 minute more.
- Add the white wine and chopped parsley, tossing quickly.
- Season generously with salt, pepper, and a squeeze of fresh lemon juice.
- Serve immediately while hot.
