Mince the garlic very finely. In a bowl, mix the minced garlic, salt, pepper, olive oil, paprika, and lemon juice to make a marinade.
Coat the ribs thoroughly with the marinade, rubbing it into all surfaces. Place in a covered dish and refrigerate for at least 2 hours, or overnight for best results.
Preheat your grill to medium heat (350°F/175°C).
Grill the ribs for 25-30 minutes total, turning every 5-7 minutes to ensure even cooking and prevent burning.
Baste with any remaining marinade each time you turn the ribs.
Once cooked, let the ribs rest tented with foil for 5 minutes before cutting between the bones and serving.
