Summer Citrus Shrimp and Avocado Salad

Ingredients
- Large Wild Mediterranean Red Shrimp - Extra Large: 1 lb cooked
- Avocados: 2 diced
- Grapefruit: 1 segmented
- Orange: 1 segmented
- Mixed greens: 4 cups
- Red onion: 1/4 cup sliced
- Citrus vinaigrette: 1/2 cup
- Extra Virgin Olive oil La Maison des Chefs 1 liter: 3 tbsp
- Lime: 1
- Salt and pepper: to taste
Instructions
- Arrange the mixed greens on a large serving platter.
- Top with the cooked shrimp, diced avocado, and citrus segments (remove all membranes from citrus).
- Scatter the thinly sliced red onion evenly over the salad.
- In a small bowl, whisk the olive oil with fresh lime juice to make a simple dressing.
- Drizzle the dressing over the entire salad.
- Season generously with salt and pepper.
- Serve immediately to prevent the avocado from browning.
