  1. Cut the puff pastry sheet into 4 equal squares.
  2. Using a knife, score a border 1/2 inch from the edges of each square - don't cut all the way through.
  3. Spread Dijon mustard evenly within the borders.
  4. Crumble the goat cheese over the mustard layer.
  5. Arrange the tomato slices evenly on top, overlapping slightly.
  6. Drizzle with olive oil and sprinkle with fresh thyme, salt, and pepper.
  7. Bake at 400°F/204°C for 20-25 minutes until the pastry is puffed and golden brown.
