Black Truffle Pearl Caviar (fresh)
Maison Crayssac's Black Truffle Pearl Caviar is made with Black Winter Truffle juice that's been transformed into pearls using spherification. From there, squid ink is used to enhance the natural coloration of the Truffle. Black Truffle Pearl Caviar does not contain any animal products, other than squid ink. It can be used as a garnishing for fish, vegetables, or meats. You can also put it in a glass of champagne as a flavorful garnishing. Black Truffle Pearl Caviar is excellent with eggs, duck mousse, mashed potatoes, white pudding and salads.
I have been buying and using this product for over five years. It is always a crowd pleaser when we serve it as an appetizer on a Bellini with crème fraîche. Most people, actually all people, believe it is an unusual caviar.
