The Moulard is a crossbred duck prized for its deep red meat and exceptional flavor. It’s the classic duck used in Southwest France, where every part of the bird serves a culinary purpose. Renowned worldwide, the Moulard magret is a standout, while the legs are traditionally simmered for hours in duck fat to create duck confit, a key component of authentic cassoulet.
Cooking Instructions: Place confit on a tray, inside a toaster or regular oven for 15 minutes or until the skin is crispy.
