The Moulard is a crossbred duck prized for its deep red meat and exceptional flavor. It’s the classic duck used in Southwest France, where every part of the bird serves a culinary purpose. Renowned worldwide, the Moulard magret is a standout, while the legs are traditionally simmered for hours in duck fat to create duck confit, a key component of authentic cassoulet.
Originally, this technique allowed families to preserve meat through the winter, storing duck legs packed in clay jars and completely covered in fat. You can recreate this tradition at home: stock up on duck fat and prepare your own confit, or slow-cook the legs using methods like braising, moist roasting, or sous vide to achieve incredibly tender, flavorful meat.
