The reputation of Isigny Beurre de Baratte dates back to the 16th century. By the 19th century, butter had become so appreciated that Paris alone was consuming around 800 tons per year. Why was Isigny butter so highly prized by gourmets of that era? The answer lies in its exceptional terroir. Located near the sea, Isigny benefits from a mild, humid climate, along with the rich natural marshlands of Bessin and Cotentin. The cows grazing in this area feed on grass naturally rich in iodine, beta-carotene, and trace elements.
These unique conditions give Isigny butter its remarkable quality and unmistakable character. Beurre d’Isigny stands out with its golden yellow color, delicate hazelnut notes, coarse rock salt, and natural richness in Vitamin A. These distinctive qualities have been officially recognized in the Appellation d’Origine Contrôlée specification, established in 1986.
