Pearl sugar waffles, aka Liège waffles, differ from the typical batter based waffle in that they are made using a yeast-based brioche dough studded with special pearl nibs of sugar that caramelize as it cooks. They are buttery and chewy soft on the inside while crispy and crunchy on the outside, where the pearl sugar hardens. A great grab and go snack or dessert!
