Shrimp and Pineapple Skewers

Ingredients

  • Large shrimp, peeled and deveined: 1 lb
  • Pineapple, cut into 1-inch chunks: 1
  • Red bell pepper, cut into 1-inch pieces: 1
  • Cup soy sauce: 1/4
  • Cup honey: 1/4
  • Tablespoons lime juice: 2
  • Cloves garlic, minced: 2
  • Grated fresh ginger: 1 teaspoon
  • Salt and pepper to taste:

Instructions

  1. 1. In a bowl, whisk together soy sauce, honey, lime juice, garlic, ginger, salt, and pepper.
  2. 2. Add the shrimp to the marinade and toss to coat. Marinate in the refrigerator for 15-30 minutes.
  3. 3. Preheat the grill to medium-high heat.
  4. 4. Thread the shrimp, pineapple chunks, and red bell pepper onto the skewers.
  5. 5. Grill the skewers for 4-5 minutes on each side, until the shrimp are opaque and cooked through.
  6. 6. Serve immediately.
