Shrimp and Pineapple Skewers
Ingredients
- Large shrimp, peeled and deveined: 1 lb
- Pineapple, cut into 1-inch chunks: 1
- Red bell pepper, cut into 1-inch pieces: 1
- Cup soy sauce: 1/4
- Cup honey: 1/4
- Tablespoons lime juice: 2
- Cloves garlic, minced: 2
- Grated fresh ginger: 1 teaspoon
- Salt and pepper to taste:
Instructions
- 1. In a bowl, whisk together soy sauce, honey, lime juice, garlic, ginger, salt, and pepper.
- 2. Add the shrimp to the marinade and toss to coat. Marinate in the refrigerator for 15-30 minutes.
- 3. Preheat the grill to medium-high heat.
- 4. Thread the shrimp, pineapple chunks, and red bell pepper onto the skewers.
- 5. Grill the skewers for 4-5 minutes on each side, until the shrimp are opaque and cooked through.
- 6. Serve immediately.
